  3. In the drippings, sauté chopped onions until fragrant and golden.
  4. To make a punchy dressing, combine apple cider vinegar, Dijon mustard, sugar, salt, and pepper in a bowl.
  5. Pour the dressing over the potatoes and onions in a bowl and toss to coat.
  6. Before serving, fold in that crispy bacon, adjust the seasoning if necessary, and sprinkle chopped parsley on top.
