Chilaquiles are the quintessential Mexican comfort food—they're crispy, saucy, and bursting with flavor! Warm red salsa is mixed with golden-fried tortilla chips, and sour cream, avocado, and creamy queso fresco are added on top. A satisfying brunch or late-night snack that hits all the right notes can be made with eggs or black beans.

  1. Heat the vegetable oil in a big skillet over medium heat.
  2. Fry the tortilla triangles for 5 to 7 minutes, or until they are golden brown and crisp.
  3. To drain the extra oil, move the fried tortillas to paper towels.
  4. Add the salsa to the same skillet and simmer for one minute.
  5. Return the crispy tortillas to the skillet and stir gently to coat them thoroughly with salsa.
  6. Cook for a further two to three minutes, or until the tortillas are slightly softer but still crunchy.
  7. Arrange the avocado slices, sour cream, fresh cilantro, and queso fresco on top of the chilaquiles.
  8. For a brunchy feel, you can optionally add cooked black beans and a sunny-side-up egg.
